Kiwi Chia Pudding Parfait

Mighties Kiwi Chia Pudding Parfaits are a novel way to eat fresh kiwi. Chia seed pudding and kiwi puree make a nutritious and tasty breakfast or snack. 

Growing up, my sister and I both liked kiwi. My mother would buy them for us frequently, but for some reason, they still felt like a special treat — certainly more exotic than your normal apple, orange, or banana.

That being said, I don't recall us ever utilizing kiwi in recipes. We always ate them as snacks, scooping the flesh out of the skin with a spoon.

Kiwi are still fantastic for nibbling, but I've discovered they're also a lot of fun to cook with.

They enhance the flavor, color, and nutritional value of a wide range of foods.  My mixed berry fruit salad includes kiwi,

but today I'm going out of the box and combining kiwi with one of my favorite snack dishes - chia pudding!

The parfaits are bright and tasty! As an added benefit, kiwi is a superfruit, filled with nutrients that are great for a pre-exercise energy boost or to refuel and recover after a workout. 

Two kiwis provide more vitamin C than an orange, more potassium than a banana, and more vitamins E and K than an avocado.
