Custard Gateau with Fruit

Ingredients:

½ cupbutter½ cupcaster sugar2eggs1 cupself-rising flour (heaped) 

Ingredients:

¼ cupsugar3egg yolks2 tbspsall-purpose flour2 tbspscorn starch1 ⅓ cupsmilk1 tspvanilla extract 

Ingredients: 

9 ozskiwi (sliced)9 ozsstrawberries (sliced) 

Ingredients: 

½ cupapricot jam1 tbspwater 

Instructions:

Preheat oven to 180°C (160° fan) 350°F gas for sponge.   Lightly grease a 20-23cm/8-9" flan tin.  

Instructions:

Butter and sugar should be mixed until light and fluffy. Mix with each egg until completely combined.  

Instructions:

Add flour and stir until combined. Spoon mixture into tray and bake for 25 minutes until pale brown and springy.   

Instructions:

Cool in the tin for 5 minutes, then transfer to a wire rack to finish.Prepare pastry cream by whisking sugar and egg yolks until combined.  

Instructions:

Mix flour and cornflour into a smooth paste. Bring milk to almost boiling in a pan. Whisk frequently as you slowly add the egg mixture from the heat.  

Instructions:

Return to pan and stir frequently until boiling over medium heat. Whisk continuously for 1 minute until thick. Whisk in vanilla after removing from heat.  

Instructions:

Pour into a clean basin and cover with cling film to avoid skin formation. Cool to room temperature. Spoon the mixture into the flan case after whisking again.  

Instructions:

Place the fruit on top. Melt jam and water in a small pan for the glaze. Brush fruit after removing from heat.
