Banana Cream Pie-Inspired Overnight Oats

Start your day with a breakfast that feels like a treat—these layered overnight oats include a delicious balance of banana, cinnamon, and a hint of vanilla to boost the flavor. 

A final touch of crumbled graham crackers gives a pie-like beauty to this simple breakfast. 

For the best results, use ripe bananas with brown patches on the peel and a soft texture when squeezed. 

In a medium bowl, mash one banana with a fork until there are no large lumps. Combine oats, milk, ¼ cup yogurt, vanilla, chia seeds, cinnamon, and salt. Whisk for 30 seconds. 

Cover and refrigerate for at least 8 hours, until the oats have absorbed the liquid and the mixture is thick. 

Divide about 1/3 cup of the oat mixture among four (8-ounce) jars; top with 2 tablespoons of the remaining yogurt.  

Divide the remaining banana into ½-inch-thick slices and evenly put them over the yogurt in the jars.  

Top with the leftover oat mixture. Before serving, sprinkle crushed graham crackers over top.
